This vegan rochers coco recipe is one of my experiment with aquafaba, it taste just like the non vegan coco macaroons or Rochers coco…one bite brought me back to childhood memories! It has 3 ingredients, sugar, coconut and aquafaba. I’ve added guar gum and vanilla extract for texture and taste.

Vegan Rochers Coco Recipe

Vegan Rochers Coco

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 organic chickpea brine from one can aquafaba so about 1/2 cup of aquafaba
  • 1/2 cup of powdered sugar - I've grounded brown sugar in a blender to make it fine!
  • 2 cups of organic shredded coconut
  • 1 tsp of vanilla extract
  • 1/2 tsp of guar gum

Instructions

  • Preheat oven 400F.
  • Add guar gum to the aquafaba in a big bowl.
  • Beat the aquafaba until it forms stiff peaks like egg whites. (min 5 minutes)
  • Incorporate the sugar slowly in the aquafaba white beating with the electric mixer.
  • Add the coconut and the vanilla.
  • Grease your baking sheet with coconut oil or use parchement paper.
  • Make small balls with a tablespoon
  • Bake for 20 minutes - 400F
