Are you ready to make moist, fluffy, soft, delicious, healthy and nutritional muffins loaded with fiber, nutrient and vitamins from superfoods?! I have a very picky eater at home and he keeps raving about those muffins. Even if you are not vegan, I can bet you will enjoy them.

In this vegan strawberry chia seed muffin recipe, I’ve used chia seeds which are super high in fiber, protein and calcium.

I’ve also added some tiger nut flour. Tiger nuts are not nuts, they are raw tuber and are suitable for people with nut allergies. Plus they are loaded with fiber, iron, potassium, magnesium and vitamin C and E. This superfood adds a sweet and nutty flavour to the muffin.

Making your own strawberry chia seed jam is super easy, basically you need strawberries (blended into small pieces), chia seeds, maple syrup and then simmer a pan for 20 minutes.

I got the jam recipe from my favorite vegan blog oh she glows. If you have never tried any of the recipes from Angela, you are in for a treat; she is a true master of combining ingredients and creating amazingly delicious vegan recipes.

This strawberry chia seed vegan muffin recipe is also gluten free, dairy free and refined sugar free!

Oh and the secret ingredient here is aquafaba which will take this vegan muffin to the next level.

Aquafaba is the goopy slimy liquid that you find in the garbanzo bean cans….yes yes! It is a replacer for egg whites.

All you need to do is whip the liquid of the aquafaba for 5 minutes like you would do for an egg white. It’s like magic so get ready for jumping up and down in your kitchen (yes, I did!).

Strawberry Chia Seed Vegan Muffin Recipe

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Servings: 6 Muffins

Ingredients

  • Dry ingredients
  • ½ cup of buckwheat flour
  • ½ cup of tiger nut flour
  • ½ cup of brown rice flour
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • Wet ingredients
  • ¼ cup of coconut oil melted
  • 2 flax eggs 2 TBS of ground flax seeds + 5 TBS of water combined. Leave for 5 min until it thickens
  • ½ cup of strawberry chia seed jam or regular strawberry jam.
  • If you are using regular strawberry jam you can add 2 tablespoons of grounded chia seeds in the batter.
  • 4 Tbs of maple syrup or more to taste
  • Added ingredients
  • + 4 tbs of strawberry chia seed jam for texture and taste.
  • 4 Tbs of aquafaba whipped like egg whites

Instructions

  • Preheat oven 400C.
  • Mix all wet ingredients in a fast blender for a few minutes until well blended.
  • Make sure you leave the “added ingredients” out of the fast blender as we want to incorporate them slowly after.
  • Combine all dry ingredients in a big bowl and mix well.
  • Whip the aquafaba for 5 minutes like you would for egg whites.
  • Add the aquafaba, the 4 TBS of strawberry chia seed jam in the wet batter and fold carefully like you would incorporate egg white to a batter.
  • Fold slowly the wet batter with the dry ingredients until they are just combined.
  • Grease your muffin tin can with coconut oil
  • Pour the batter in the muffin mold.
  • Bake for 20 minutes at 400C.
  • Serve on its own for breakfast or with a little extra strawberry chia seed jam…yum.
