Ingredients
Dry ingredients
½
cup
of
buckwheat flour
½
cup
of
tiger nut flour
½
cup
of
brown rice flour
1
tsp
of baking powder
1
tsp
of baking soda
Wet ingredients
¼
cup
of
coconut oil
melted
2
flax eggs
2 TBS of ground flax seeds + 5 TBS of water combined. Leave for 5 min until it thickens
½
cup
of strawberry chia seed jam or regular strawberry jam.
If you are using regular strawberry jam
you can add 2 tablespoons of
grounded chia seeds
in the batter.

maple syrup
or more to taste
Added ingredients
+ 4 tbs of strawberry chia seed jam for texture and taste.

of aquafaba
whipped like egg whites
Instructions
Preheat oven 400C.
Mix all wet ingredients in a fast blender for a few minutes until well blended.
Make sure you leave the “added ingredients” out of the fast blender as we want to incorporate them slowly after.
Combine all dry ingredients in a big bowl and mix well.
Whip the aquafaba for 5 minutes like you would for egg whites.
Add the aquafaba, the 4 TBS of strawberry chia seed jam in the wet batter and fold carefully like you would incorporate egg white to a batter.
Fold slowly the wet batter with the dry ingredients until they are just combined.
Grease your muffin tin can with coconut oil
Pour the batter in the muffin mold.
Bake for 20 minutes at 400C.
Serve on its own for breakfast or with a little extra strawberry chia seed jam…yum.
